Autumn Roast Pumpkins

It's no denying that Autumn is upon us. The trees have nearly shed all their leaves, the days are much shorter, much colder. Halloween has come and gone, and before you know it, it will be Christmas. That's right, I said the C word.

I'm craving lots of comfort food, easy foods that can be left on their own in the oven with not much tending to. At this time of the year it's all about the squash and my favourite way to eat them is to simply roast them in the oven. Seasonal simplicity at it's best. And because time is something I don't have a lot of these days to spend in the kitchen.

Does anyone else feel like they wish they had more time in their day? I certainly do.

Here I give you just simple roasted pumpkins. No recipe needed, no words necessary. Just Photos.

How did it get to November so quickly? We have been completely embraced by Autumn weather in the last couple of weeks and you can feel the chill in the air. We even had fog in the last couple of days, which we don’t get often and appropriately apt for Halloween. I have enjoyed layering up and wearing comforting scarves again.

My weekends have recently been cut short. My Saturdays are now occupied with house hunting, as we search for a place we can buy and call our own. It’s been testing times, both mentally and physically. Being nearly 5 months pregnant, it’s been physically demanding, as I traipse around South-East London viewing properties in the hope of finding one remotely suitable to buy.

I’m heading to the west coast of Ireland tomorrow for a much anticipated food photography and styling workshop hosted by Imen of and taught by Susan Spungen and Beth Kirby of Local Milk Blog. I have been looking forward to this trip (ok more like really, really excited!) since I booked myself a spot. The location of where we are staying looks stunning and I cannot wait to arrive at Ballynahinch Castle and meet everyone.
