CHERRY SORBET

Summer is well and truly upon us and it's this time of year when my favourite fruits are in season. One of my favourite fruits is cherries. I also love ice-cream and what better way to satisfy both cravings on a hot summer's day? It is so, so easy to make and think of it as a healthy (kind of) alternative to ice-cream.




I don't own an ice-cream maker at present (on my kitchen wants list) which this recipe could do with. However, if you're like me and don't own one, it's also ok. 

INGREDIENTS

1 kg of cherries
1 cup of water
2/3 cup sugar
1 tsp of fresh lemon juice

METHOD

1. Remove the pits from the cherries.
2. Combine the cherries, sugar, water, lemon juice in a saucepan.
3. Heat through on medium heat for approximately 15 mins or until the cherries are softened.
4. Let the mixture cool to room temperature and refrigerate until cold.
5. Purée the mixture in a blender.
6. Pour the mixture through a fine sieve and into your container of choice.
7. Stir the mixture every 30 mins to 1 hr with a fork to break up the ice crystals.
8. Once the sorbet is firm, enjoy!
