Pomegranate Syrup Soda + Winter Walks in the Heath

As the days have shortened and the nights get longer, I have been getting ready for Christmas.

There have been walks in the parks, hot drinks like this made and plenty of homemade treats.

This year, for the first time, we have decided to spend Christmas day in London. We would normally head to Galway, Ireland to spend it with my in-laws. But this year, we decided to spend our last Christmas before our baby is born in our own home. We won’t be alone though and will have a group of friends joining us for a feast. I cannot wait to host my first Christmas meal.







Being pregnant doesn’t mean you can’t enjoy a festive tipple. I wanted to make a drink that I could enjoy over the holidays. Truth be told, I didn’t want to feel like I was missing out on the Christmas cocktails. With pomegranates in abundance, this beautiful, red ruby coloured syrup can be made in advance and stored in the fridge, until ready to drink.

INGREDIENTS

2 pomegranates
1/2 cup sugar
Juice lime


METHOD

Remove the pomegranate seeds and blitz in a food processor to a pulp. Pour the juice and pulp through a fine sieve to remove as much of the juice as possible. Add the pomegranate juice to a pan with the lime juice and sugar. Bring to a boil and reduce heat to simmer for 10 minutes until the syrup thickens and reduces. Allow to cool and store in fridge until ready to use. Mix with soda and ice. You can also mix the drink with orange juice or more lime juice if you wish.
